PineAPPle BARS

Serves: 4-6   |   Prep: 20 mins   |   cook time: 70 mins

Ingredients

For crust and topping

1 ½ cups Flour
½ cup Sugar
¾ cup Chilled Butter, cubed
½ tsp salt

For Pineapple Filling

1 Del Monte sliced Pineapple can
2 Eggs
1 cup Granulated sugar
½ cup Sour cream light or whole, not fat free
cup Flour
½ tsp salt

Coconut Drizzle

1 cup Sugar
2 tbsp Milk
1 tsp Coconut Extract

Here’s all you need to do:

  1. Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with nonstick spray.

For crust and topping

  1. Add all ingredients to a bowl and combine until crumbly.
  2. Remove one cup of crust mixture and set aside. Pour remaining mixture into bottom of baking dish and gently press until even.
  3. Bake for 10 minutes on center rack of oven. In mean time make your filling.

For Pineapple Filling

  1. In medium bowl, gently combine all filling ingredients until flour is incorporated fully.
  2. Pour into warm crust and TOP WITH REMAINING CRUMB MIXTURE.
  3. Bake at 350 degrees for 50 minutes or until center is firm to touch and edges are slightly brown. Remove from oven and let cool completely.
  4. Combine all coconut drizzle ingredients until smooth and drizzle onto cooled bars.
