The Main Purpose of the role:

  • To work closely with the Executive Chef to oversee all aspects of food preparation, ensuring that products are consistently prepared, well-presented, and meet the highest standards of quality and Food safety. Manage the operations in all kitchen areas prioritizing food safety, portion control, work flow, staff attendance, maintenance requests, CCP records and daily production report.)

The main areas of responsibility:

  • Oversee the day-to-day running of all sections, deputizing for the Executive Chef in his absence, to deliver high quality food standards.
  • In charge of daily ordering for his section with an overview of items for the whole kitchen.
  • In charge of the production of quality daily assorted products and menus, implementing Del Monte’s menu ethos and ideas and bringing the dishes to life.
  • Ensure consistency of food quality, presentation, and portioning; all prepared to produce in a timely manner.
  • Keep Recipes-Build Cards in good order and updated as necessary. Work to agreed recipes and ensure other Senior staff and Junior staff work in the same way.
  • Training and developing junior members of the team.
  • Prevent waste of food of any kind and over-production to mis-en-place. Keep stocks ordering to a minimum. Help to minimize the consumption of electricity, and water.
  • Ensure daily work areas are allocated to staff in the most efficient and cost-effective way to achieve quality results.
  • Help develop staff in achieving consistently high standards of food production and cleanliness in the workplace and encourage a continual improvement process.
  • Daily update and fill all CCP records related to all kitchen working stations on line.
  • Forwards suggestions for improvements in raw material, menus, cost savings and equipment.
  • Make sure that all finished products are well presented.
  • Assures that all food requests are executed to the fullest satisfaction of the customers in accordance with the Company’s policies.
  • Assures that all food items are prepared and packed according to established standards and practices following Del Monte Standard Operation Procedures
  • To supervise and carry out kitchen activities hygienically, safely and efficiently as per guidance by his supervisor in order to follow hygiene and safety protocols of the company
